We always finish on a whetstone for maximum sharpness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e We primarily use Shapton Rockstar and Shapton PRO whetstones. We select the grit of the finishing stone after assessing the knife's steel, thinness and condition.
