The Hinoura family is well-known for their exclusive, hand-forged knives. Tsukasa and his son Mutsumi work in the city of Sanjo, Niigata, Japan, a city also famous for its fine Sake. The knives that leave the Hinoura's hands are well-forged and very sharp. Much focus is placed on the heat treatment so that each blade performs optimally over time, something that has strongly contributed to their good reputation worldwide.
