Shibata Kotetsu is a spectacular knife series with an elegant appearance. All knives in the series have a very defined tip, usually found on bunka and kiritsuke models.
The steel is the very hard and popular SG-2 powder steel, laminated with 2 layers of softer steel. The blades are very thin and come very sharp. Thanks to the thin blades, the knife cuts very well, and the hard powder steel ensures that the knife retains its sharpness for a long time. However, the delicate blades should be handled with care as they can easily be damaged if cutting through hard particles.
This is a very beautiful and high-performing knife that a true knife connoisseur will love!
Manufacturer's own words:
Japan's first ironclad ship was named Kotetsu. Her name means 'Ironclad'. The Kotetsu had a very unusual bow. It looks like my knife. And the Kotetsu was the first in her class, and she used a pioneering 'cutting-edge' design.
The Kotetsu was formidable - just like my knife. And the Kotetsu was ironclad, while my knife is actually steel clad. Inside I put SG-2 stainless powder steel. Outside, I have clad it with stainless steel sides. This 3-layer construction is easier to sharpen, and it keeps its edge better, and it resists damage better.
