A kiridashi is a traditional Japanese craft knife, originally designed for fine adjustments in woodworking, leathercraft, and other precision-demanding tasks.
This blade is forged in Shirogami (White Paper Steel) – a carbon steel with extremely high sharpness potential, especially appreciated by professionals and sharpening enthusiasts. The single-bevel edge (kataba) provides high control and is well-suited for both cutting and marking. The knife is made of carbon steel (not stainless) and takes an incredibly sharp edge. The right side is single-beveled while the left side is slightly concave.
