A santoku knife with a blade that measures 186 mm from tip to heel. The blade is hot forged by a true master; Shiro Kamo from Takefu Knife Village.

Shiro Kamo was the first blacksmiths that we introduced, it was back in 2008. Today his knives are still one of the most popular knives we sell and its easy to understand why. The looks and performance is top notch while the price is still low. Kamo san lives and works in Takefu and he is one of the founding members of TKV, Takefu Knife Village, a large factory that twenty or so blacksmith share. They do so for the exchange of ideas and knowledge, to lend a helping hand or simply for the good company of others.

This knife is hot forged by hand in aogami#2 carbon steel, heat treated to 63-64 HRC. The blades are tapered and the finish is black kurouchi. The grind is thin, very thin, and they cut like lasers. A really good pick up that we truly recommend.

We call this knife kuroi ryuu (黒い竜) which means Black Dragon.


Carbon steel is NOT stainless. Be sure to wipe off all moist directly after use to avoid rust.


Disclaimer: Japanese knives have thin edges with high hardness. This makes them much more fragile than traditional european knives. These blades should under no circumstances be subject to twisting, prising or cutting into hard objects. Such handling could easily cause damage to the edge, something that is not valid grounds for a warranty claim.

Care & maintenance

Carbon steel
Carbon steel is not stainless and therefore requires a little more care than stainless steel. Always clean and dry the knife thoroughly immediately after use. This is especially important after cutting acidic foods such as citrus fruits, tomatoes and onions, as the acid can quickly react with the steel.

Do this:

Clean the knife immediately after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Dry the blade thoroughly after cleaning.
For long-term storage, the blade can be protected with a thin layer of tsubaki oil.

Avoid:

Dishwashers.
Leaving the knife in water or allowing it to remain damp.
Leaving food residue, especially from acidic ingredients, on the blade.

Patina, a completely natural oxidation of carbon steel

As carbon steel is used, the blade will gradually change colour and develop a patina. Depending on the foods you cut, it can take on shades of grey, blue, brown and sometimes even almost rainbow-like tones.

Patina is a natural reaction between the steel and food and is not the same as rust. In fact, an established patina provides some protection for the steel and makes the blade less reactive over time.

Rust, on the other hand, should be removed. It is often orange or reddish-brown and may feel rough on the surface of the blade. A patina is normally smooth and is a natural part of owning and using a carbon steel knife.
