Sujihiki
A short and smooth sujihiki with a 212 mm blade.
Toshihiro Wakui is very talented and he makes very well-forged carbon steel knives. In this series, he uses Aogami#2 as the core steel, which he forge-welds with a damascus steel cladding (hon warikomi). It is common for smiths to purchase pre-laminated steel, but Wakui forge-welds his own blade material to get it exactly as he wants.
Wakui has rounded all edges and given the blade soft contours. He tapers the blades with great skill (tapering from spine to tip), so the knife fits very well in the hand. The handle is octagonal ebony with a pakkawood bolster.

Aogami#2 is a carbon steel that is not stainless. Be careful when using the knife, as the thin and very hard edge can easily be damaged if you chop into harder particles.
