Bunmei is a Japanese knife brand from Yoshikin, the same manufacturer behind Global. Bunmei's double-bevel range combines modern Japanese knife manufacturing with classic, functional geometry adapted for all-round kitchen use. The grind is symmetrical with a thin edge and relatively slender blade geometry. The result is low cutting resistance, good control, and a neutral cutting behavior that works equally well for meat, fish, and vegetables. Compared to traditional Western knives, the blades often feel lighter and more precise without being fragile.
The blades are made from Japanese stainless steel (chromova), hardened to provide a good balance between edge retention, toughness, and ease of sharpening. Hardness: 56-58 HRC
The sharpening angles are relatively narrow, which provides high initial sharpness and clear feedback against the ingredient.
