Kashima RS-60 is a series of knives with truly fine properties, manufactured in the Japanese knife city of Seki City. The steel in the knives is called PS-60, which is a stainless single steel hardened to 60 HRC. In other words, it is a hard steel that holds its edge well while being easy to sharpen. Thanks to its very thin blade, this knife cuts exceptionally well, while its soft forms make it comfortable to work with.
