Shiro Kamo | Arashi Gyuto 240mm
Chef's knife with a blade just under 24.5 cm long. It has a stainless powder steel core and a dazzlingly beautiful cladding of dark etched nickel damascus. The knife is hand-forged by Shiro Kamo with a skillfully tapered spine and thin grind that results in an extremely delicate edge. Hand-forged quality at its best! The handle on this model is octagonal and made of red sandalwood with a black pakka wood bolster.
Blade thickness at bolster: 3.3
Spine thickness at midpoint: 1.8 mm
Blade height at heel: 54 mm
Edge length: 246 mm
Weight: 175 grams
NOTE: Measurements and weight may vary slightly as the knife is hand-forged.
Shiro Kamo always delivers knives with the highest possible performance. The blades are thin and can easily be sharpened to a razor's edge. In this series, Shiro Kamo has used SG-2 stainless powder steel hardened to 62-63 HRC. Around the powder steel core are several layers of softer steel, giving each knife a unique and beautiful pattern (known as Damascus steel).
This is a knife made entirely by hand, boasting superb quality and classic Japanese design.
NOTE: This knife series has extremely thin edges made of very hard steel. They are therefore very sensitive to stress. Be extra careful when cutting so that the edge does not encounter too much resistance and get damaged.
