Boning Knife | Honesuki
A thin utility knife with a honesuki shape. The blade measures 15 cm. The honesuki shape is actually a Japanese boning knife. However, this model is very thin and is better suited as a utility knife, with a distinct tip and a high blade. The handle on this model is octagonal and is made of red sandalwood with a bolster of black pakka wood.

Ryuga 龍牙 is a hand-forged knife series from master Shiro Kamo (Ryuga means 'dragon's fang' in Japanese). The knife has 32 layers of Damascus steel with an inner core of hard stainless VG10 steel (61-62 HRC). Shiro Kamo always delivers knives with the highest possible performance. The blades are thin and can easily be sharpened razor-sharp.
This is a knife that is made entirely by hand, is of the highest quality, and has a classic Japanese design.
Please note that the edge is hard and thin. You should never force the edge through ingredients as damage to the edge can easily occur. It is a precision instrument that should be used with care.
