Takamura R2 chef's knives are Formula 1. The knife has a very thin blade that has been sharpened to absolute razor-sharpness. The steel is high-performance SG-2 powder steel, which Takamura heat-treats with great care (62-63 HRC). If you are looking for a lightweight knife with an incredibly good cutting blade, this is the knife for you. However, we would like to point out that the hard and thin blade cannot withstand rough handling, just like a Formula 1 car.

Clean the knife after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Rinse the blade especially thoroughly after contact with salty foods.

Leaving salt or moisture on the blade for extended periods.

Stainless steel is highly resistant to corrosion, but it is not completely rust-proof. Salt and moisture left on the blade can, over time, cause small rust spots or pitting.
