Takamura HSPS are the Formula 1 of chef's knives. The knife has a very thin blade that has been sharpened to a razor edge. The steel is high-performance SG-2 powder steel, which Takamura heat-treats with great care (62-63 HRC). If you are looking for a light knife with a blade that cuts incredibly well, this is the knife for you. However, we want to point out that the hard and thin blade cannot withstand rough handling, just like a Formula 1 car.

Clean the knife after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Rinse the blade especially thoroughly after contact with salty foods.

Leaving salt or moisture on the blade for extended periods.
